Ingredients
  

For the Mushroom Buns:

  • 8 large portobello mushrooms (4-5 inches in diameter)
  • 3 tablespoons extra virgin olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Sea salt and black pepper to taste

For the Burger Patties:

  • 1.5 pounds grass-fed ground beef (80/20 lean-to-fat ratio)
  • 2 tablespoons fresh rosemary, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper

Mediterranean Toppings:

  • 1 cup crumbled feta cheese
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cups fresh arugula
  • 1/2 cup kalamata olives, pitted and sliced
  • 1 small red onion, thinly sliced
  • Greek yogurt sauce

Instructions
 

Prepare the Mushrooms:

  • Clean portobello mushrooms gently with a damp paper towel.
  • Remove stems and gently scrape out gills.
  • Mix olive oil with minced garlic and oregano.
  • Brush mushrooms on both sides with the seasoned oil.
  • Season with salt and pepper.

Make the Patties:

  • In a large bowl, combine ground beef, rosemary, garlic, Worcestershire sauce, salt, and pepper.
  • Mix gently with hands until just combined (don't overmix).
  • Form into 4 equal patties, making a slight dimple in the center.
  • Let rest at room temperature for 15 minutes.

Cooking Process:

  • Preheat grill or cast-iron skillet to medium-high heat.
  • Grill mushrooms for 3-4 minutes per side until tender.
  • Cook burger patties for 4-5 minutes per side for medium-rare (internal temperature 135°F).
  • Top with feta cheese during the last minute of cooking.

Assembly:

  • Place a grilled mushroom cap gill-side up.
  • Add a handful of arugula.
  • Place the cheese-topped burger patty.
  • Top with sun-dried tomatoes, olives, and red onion.
  • Add a dollop of Greek yogurt sauce.
  • Crown with the second mushroom cap.

Notes

  • Prepare patties up to 24 hours in advance, keep refrigerated.
  • Store cooked burgers without toppings for up to 3 days.
  • Do not store assembled burgers - components should be stored separately.
  • Mushrooms can be pre-grilled and reheated gently.
